We’ve been loving apples around here lately. Logan, for one, is obsessed with these organic applesauce pouches I found at Costco, with flavor mixings that include cinnamon, banana, and strawberries. I’ve tried some and can see why he likes ‘em. So yummy. We’ve also been enjoying apples just cut up into slices — that is until these delicious apple-cinnamon muffins!
I woke up one morning with a craving for muffins and we had an abundance of gala apples on hand from our latest Costco run. (Side note: after having Logan, Costco has seriously become like a second home. And I appreciate the number of organic, all natural options they’ve got! Not to mention the bulk diapers and wipes.) These muffins are grain-free, packed with flavor, and the texture is also on par with their gluten counterparts.
INGREDIENTS: (Makes 12 muffins)
2 apples, peeled and diced (I used organic gala apples)
4 eggs, whisked
1 cup almond flour
1/2 cup apple sauce
1/4 cup coconut flour
1/4 cup coconut oil, melted
3 tablespoons agave
2 tablespoons cinnamon
1 teaspoon baking soda
1 teaspoon vanilla
DIRECTIONS:
1. Preheat oven to 350 F.
2. Combine almond flour, coconut flour, cinnamon, and baking soda.
3. Add whisked eggs, apple sauce, melted coconut oil, agave, and vanilla.
4. Fold in your diced apples.
5. Fill muffin cups about three-quarters full and bake for 25-30 minutes.
6. Enjoy!
